Soy Okara Muffins
For 12 muffins

11/2 cup All Purpose flour
1/2 cup Soy Okara
1/4 cup Brown Sugar
1 tablespoon Baking Powder
1/2 Teaspoon Salt
1 cup Soymilk
2 Eggs, beaten
1/4 cup Soybean Oil

Mix Flour, soy okara, brown sugar, baking powder and salt. Combine soy milk, eggs and oil; add to dry ingredients and mix only enough to moisten. Fill oiled muffins tins. Bake at 400° F for 20 minutes.


Okara Nut Bread
An Old Favorite of Farmers
Serve 18; 1/2 inch slice each
Cooking time: 50-55 minutes

1 cup okara (Okara is the pulp from making soymilk or other nut milk)
1/3 cup low-fat (1%) buttermilk
1/2 cup packed brown sugar
1/4 cup margarine
1 egg
2 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chopped pecans or other nuts

Preheat oven to 350° F. Lightly oil a 9 x 5 x3 pan. Stir together okara and buttermilk; set aside. Cream brown sugar and margarine together until light. Beat in egg. Add okara mixture; beat well. Sift together flour, baking powder, baking soda, and salt; add all at once to liquid ingredients. Stir until well blended. Stir in nuts and turn into pan. Bake for 50-55 minutes, or until toothpick inserted in center comes out clean. Cool 5 minutes in pan. Remove from pan and complete cooling on a wire rack before slicing.



Almond and Soybean Milk
Use soymilker to make it at home

Makes 6 glasses of milk
Cooking Time 12 minutes

1/3 cup of dry soybean (2/3 cup of fully soaked soybean) 1/4 cup of dry almond (1/3 cup of fully soaked almond) 6 cups of water 2 table spoons of brown sugar or any flavor your desired (e.g. maple syrup)

Soak soybeans and almond for about 6 to 8 hours. Rinse. Place all of the soaked soybean and almond into the loading compartment of the SoyMilker. Pour 6 cups of water into the container. Connect the power cord into the electricity outlet. Press START button of SoyMilker. Wait until beep. Lift the machine head and take okara for making okara bread. Add brown sugar or other flavor into the milk. Serve hot or cold.



Regular Plain Rice Milk (By using SoyMilker)

1. Measure 2/3 to 3/4 of a cup (regular measuring cup) of long grain rice. DO     NOT SOAK, use dry rice. Place the dry rice into the Filter Cup.
2. Pour 6 cups of water into the container. Water level is between the Max.     and Min. water mark. Plug in the electricity sock and press the START     button. Wait until beep.
3. Lift the machine head and let the residual milk drip for a few seconds.     Rice milk is ready to serve hot, or let it cool down. Add your own flavor     or drink plain.




Mixed Rice and Sesame Milk

1. Measure 2/3 of cup (regular measuring cup) of long grain rice and two     tablespoons of sesame. DO NOT SOAK. Place the dry rice and sesame     into the Filter Cup.
2. Pour 6 cups of water into the container. Water level is between the Max.     and Min. water marks.
3. Plug in the electricity sock and press START button. Wait till beep.
4. Lift the machine head and let the residual milk drip for a few seconds.     Mixed milk is ready to serve hot or let it cool down. The milk has very     good pleasant smell and taste. Add your own flavor or drink plaint.




Rice Cake
Use residual rice pulp ( Muchi ) in the Filter Cup

1. Mix the Muchi with two table spoons of margarine and four table spoons     of sugar or other sweeteners as you like.
2. Place the mix into a bowl. Place the bowl to a water steamer.
3. Steam for 12 minutes.
4. Put all the steamed cake-mix onto a sheet of aluminum foil or plastic     cling wrap. Roll the cake-mix and make a round, long shape. Let it cool     down for five minutes and slice into ? inch pieces.
5. Ready to serve as desert or appetizer.
